Dopo qualche giorno di riposo, ritorno al mio blog con una ricetta semplice e gustosa: la pasta con la bottarga.
Gli ingredienti per 2 persone sono:
– 200g di pasta lunga
– 1 pezzo di bottarga di muggine
– 1/4 di cipolla
– 2 rametti di prezzemolo
– buccia grattugiata di limone
– olio
– sale
In una pentola capiente facciamo bollire abbondante acqua per cuocere la pasta.
Nel frattempo laviamo la cipolla, puliamola e tritiamola finemente.
Laviamo i rametti di prezzemolo, stacchiamo le foglie e tritiamole.
Infine spelliamo la bottarga e teniamola da parte.
Quando l’acqua inizia a bollire, saliamola e cuociamo la pasta secondo le tempistiche riportate sulla confezione.
In una padella facciamo rosolare la cipolla con due cucchiai d’olio a fuoco basso.
Quando la pasta è pronta scoliamola e versiamola nella padella con il soffritto di cipolla.
Aggiungiamo il prezzemolo e un filo d’olio, poi grattugiamo sulla pasta la bottarga spellata e buccia di limone a piacere.
Saltiamo la pasta e serviamola ben calda.
Un piatto velocissimo e ricco di sapore, perfetto da preparare all’ultimo minuto.
Non ho dato dosi precise per la bottarga perché a mio avviso va dosata secondo il proprio gusto.
Se si vuole ottenere un sapore più delicato è possibile sostituire la cipolla con lo scalogno.
